Roig Boig Ancestral is a sparkling wine made under the ancestral method, a very old method that produces sparkling wines after a single fermentation. In the ancestral method, the must starts its fermentation in the tank, but it is bottled before finishing, in order to complete the fermentation in the bottle.
A natural sparkling wine blended from both, red and white native and experimental grape varieties; Xarel.lo, Turbat. Monica, Mando, Sumoll and Canonau.
Hand harvested, short maceration of one hour, soft pressed, fermented with indigenous yeasts in stainless steel, where it will aged for four months on its fine lees. Bottled with no added sulfur; SO2: <10 mg/l.
Residual sugar: 0,4 g/l
Tasting Notes: Medium body, fruity, juicy, flowing, fresh and light.
Toni Carbó, the winemaker linked to Mas Candí, launched in 2011 together with his wife, Anna Serra, their own personal project, always faithful to their way of understanding viticulture. They are part of a new generation of artisan vignerons, producers of natural wines, seeking the most authentic and honest expression of the terroir and working with the upmost respect for the environment.
La Salada is the name of their project, the name of the farmhouse where both his grandfather and great-grandfather worked all their lives quite hard, a homage to both of them, lifelong winegrowers. Toni has taken over the family's vineyards, vines that have never seen any chemicals and that he continues to work organically. He cultivates the vineyard in the most natural way possible, harvesting by hand, spontaneous fermentation with indigenous yeasts, ageing taking place in stainless steel vats and amphorae, never adding sulphur. At the Bodega La Salada, Toni has developed a range of natural wines, all of which are honest, unique wines with a marked Mediterranean character.
