La Penitencia is a Ribeira Sacra red wine, made in Adegas Guímaro from the Pombeiras vineyard, from almost centenarian vines planted on small steep sloped terraces along the river Sil. The coupage is mainly Mencía (85%) complemented with a small quantity of other red varieties. Fermented with indigenous yeasts in open barrels. Spent 12 months in 500 l. French oak barrels. It is sold without the Denomination of Origin seal, and its production is very small. 900 bottles
Raúl Pérez is regarded as among the most talented and innovative winemakers, almost a legend within the Spanish wine making world and abroad. The collaboration with other wine-makers and wineries have also proved a great success. He works with the autochthonous varietals of the area. He makes amazing wines in different appellations in Galicia and elsewhere, always small and select productions. To get hold of his wines is not that easy as they are probably one of the most sought-after.
Tasting notes: Mineral with hints of spices, ripe dark cherry fruit and a slight floral touch. Medium bodied, elegant and balanced, soft and velvety tannins and very good acidity.
Notes: With a good capacity for ageing, will drink well for 10 – 15 years.
