Tabernario is a barrel-aged red wine of limited production from the area of Manzaneda, in the most south-eastern part of the Ribeira Sacra (although the wines are not within the DO). Produced by Daterra Viticultores, a project led by Laura Lorenzo, a young winemaker who practises heroic viticulture in a very steep area where, due to the complexity of the terrain, it is only possible to work by hand, as the vines are located on terraced crops or impossibly steep slopes.

The grapes come from a total of 4.5 hectares spread over different villages around the village of Manzaneda. She practises respectful, minimal-intervention farming using ecological and biodynamic principles. Here, Laura grows grapes of excellent quality, resulting in wines with a distinctive personality and a very Atlantic profile.

Production:

The grapes are harvested manually, from vines planted on a steep hillside.

50% of the grapes are destemmed, macerated for 10 days, and allowed to ferment spontaneously using indigenous yeasts. Aged for 11 months in 500-and 100-litre chestnut barrels. Bottles without fining or filtering.

Tasting Notes:  Fresh and lively red fruit with mineral and floral undernotes and a marked Atlantic character. On the palate, it is elegant with a pleasant feel, reminiscent of fresh red fruit with light notes of aromatic herbs.
