Production: Exclusively produced from the celler’s own Pinot Noir vineyards; 2 small plots of 15 year-old vines, growing on clay soils, at the top of the Capçanes mountains at an altitude of 500 m. above sea level. The grapes were hand-picked and had selected. Fermented in stainless steel tank at controlled temperature of 24 -28º, short maceration. The wine has aged during 12 months in new French oak barrels of 300L, light and medium toasted, followed by another 3 months in stainless steel tank before bottling. Bottled unclarified with a light filtration.
Vinified under the supervision of the Orthodox Union (OU). It is a Kosher wine of high certification: Lo Mebushal (not pasteurized) and Le Pessaj (suitable for Passover). Suitable for Vegans
Founded in 1933 by 5 families from the village, who together established a cooperative that would handle large quantities of grapes economically and efficiently. The cooperative wears the name of the village where it is located: Capçanes, a village hidden away in the Priorato hills inland from Tarragona and with a long wine growing history.
The company was reinvented in the 1990s as an independent company with its original members as shareholders, today they have around 130 members and they produce a large selection of good quality wines including the well-known Peraj Ha’abib – a Kosher wine- under the appellation of Montsant. www.cellercapcanes.com
