Production: Elaborated from the three traditional cava varieties: Macabeu, Xarelo and Parellada. Manual harvested, follows a process of grape selection at the vineyards, only the first juice, the so-called tear must and flowers must will be chosen to make the Cava Llopart.Especial “Coupage” of 15% from Reserva wine. Bottle fermented, “method Champenoise” Aged in bottle for a minimum of 42 months. Certified Organic by CCPAE, the Catalan Council of organic production, the public watchdog responsible to the ministry of Agriculture of the Catalan Government.
Cava Llopart is one of the oldest Cava House in Spain, the family’s history dates back to 1385, and the first cava Llopart bottles were produced at the old country house cellar in 1887, despite their hard beginning due to the phylloxera plague at the end of the XIX century, they managed to pull out together with great efforts and hope, introducing the most suitable grape varieties to elaborate high expression and complex cavas. Today, Cavas Llopart are consolidated as a high quality product, keeping themselves loyal to the roots using the exclusive craft elaboration methods, in accordance with the strict traditional system “Champenoise”, they elaborate their cavas at the family’s country estate “Can Llopart de Subirats”, situated in a mountainous area, geologically formed 22 million years ago, and where it has been found a great number of molluse fossil, the balanced grounds with a moderate level of nutrients and organic compost and the appropriated microclimate with a moderate rainfall, shape the perfect setting for vine cultivation, resulting in concentrated, balanced grapes of great fineness which will define the personality of all their cavas and wines.
Cava LLopart is a founder member of the new Brand, CORPINNAT, which stand for a collective European Union Brand established with the aim of distinguishing great sparkling wines made in the heart of the Penedès, from 100% organic manual harvest, 100% vinified on the premises of the winery and long ageing.
Tasting Notes: Golden colour with delicate fine bubbles. Long aging complex bouquet, lovely mouth feel, some elegant honey and toasty elements with dried fruit notes, smooth creamy texture and good acidity-sugar balance.
Note: A Cava recommended for all those who love aged and developed cavas. Best consumed up to 12 – 18 months after disgorgement date. Ideal to accompany a wide range of consistent meals.
