Production: There are many ways of making wines, one of them, which had practically disappeared, is the elaboration of white wines “brisados”, a way wines were made by the farmers and winegrowers locally. The wine is made exclusively with white grapes but following the vinification process for red wine, a prolonged fermentation in contact with the skin, which provides the wine with a deeper golden color and body. In the Brisat there is a kind of symbiosis between all the elements that compose the grape, skin, pulp and seeds. The grapes for the Brisat are 100% White Grenache and come from a very small plot “La Sendroseta” of just 1 hectare of vines planted in the 90s and made up of “panal” soils in the district of Gandesa, in a hillside overlooking the mountain of Santa Bárbara and ecological farmed. The maceration and fermentation of the skin, pulp and seeds takes place for 5 days, after the pressing of the wine continues the fermentation during another 20 days in a 750 liters ceramic vat. Ageing for 6 months on its lees in the same vat. Bottled without clarification. Agriculture ecologic.

Celler Bàrbara Forés is a family owned winery that dates back to the 19th century. It takes the name from its original founder and winemaking, a pioneer of the 19th century, Bàrbara Forés (1825-1905), who together with her son Rafael Ferrer, built the Bodega and equipped it for bottling wine, which was something rare in that century. Now the winery is in the hands of their descendant Carmen Ferrer and her husband Manuel Sanmartin, who took the winery over in 1994, restoring it and making it work again.
