Sketch is a pure Albariño wine sourced from old vines planted in 1972. Although it is an Albariño from the Salnés subzone it´s sold without the Rias Baixas Denomination of Origin seal. The vines are located at a short distance from the sea, just 150 meters, growing in a mixture of sandy and granite soil. The harvest takes place at least two weeks later than usual. Fermentation and ageing happens in a large old French oak barrel of 750 litres in contact with its fine lees during 12 months. Afterwards the bottles will lay 19 meters deep into the Arousa estuary where they will rest at a constant temperature, humidity and pressure for approximately 3 months. Its production is very limited of just about 600 bottles.
Raúl Pérez is regarded as among the most talented and innovative winemakers, almost a legend within the Spanish wine making world and abroad. The collaboration with other wine-makers and wineries have also proved a great success. He works with the autochthonous varietals of the area. He makes amazing wines in different appellations in Galicia and elsewhere, always small and selected productions. To get hold of his wines is not that easy as they are probably one of the most sought-after.
Tasting notes: Remarkable for its complexity and elegance, as well as for its character. Its style is reminiscent of a Burgundy wine. Fragrant, dry with citric notes and creamy aromas, saline notes and good mineral intensity. Excellent acidity.
