Production: The grapes are harvested by hand, followed by a careful sorting of the grapes at the Cellar. Fermentation is done with natural yeast at controlled temperature of 27ºC. The malolactic fermentation is made in 100% French oak Allier with quarterly racking. Aged for 16 months in new (60%) and second year French oak allier.
Hacienda Monasterio is one of the Ribera del Duero’s stars. Its principal wine maker is the well known Dane, Peter Sisseck (Dominio de Pingus). The estate, founded in 1991, is located in the valley of the Duero River in the province of Valladolid and it comprises of 160 ha. of which 78 are planted with vines. The vineyards are exceptionally well placed, on a north-south facing slope, excellent conditions for the proper growth and maturing of the grapes. The winery carries out an organic viticulture, they are environmentally friendly, no herbicides, pesticides or chemical fertilizers are used, promoting the use instead of natural products such as plant extracts of valeria, hypericum, milfoil, etc. www.haciendamonasterio.com
Tasting Notes: Slightly floral nose overlaid with mineral aromas and minty notes. Elegant full flavoured wine with ripe black fruits domianted by mineral notes, elegant silky tannins and a leghtly and persistent aftertaste with hints of cinnamon.
Note: It is recommended to decant. It will gain with some bottle ageing. Drink through 2030
