Un sueño en las Alturas 2020, the winery's new oenological jewl, is the first vintage made of a high-altitude project born out of respect for traditional viticulture and the recovery of old vines in three villages where the vines are growing at an altitude of over 1000 metres.

Its name defines and pays a tribute to Paco Rodero, the founder of the renowned winery "Pago de Capellanes", and his wife Conchita Villa, who had always envisioned, without being able to accomplish it, the dream of making a high-altitude red wine, different and unique from the recovery of the ancient vines and planting new ones in the villages of Fuentenebro, Pardilla and Honrubia. The project has finally been carried out by his daughter Estefania, in charge of the winery, with the production of this first vintage of 2020 coming out in the market.

The wine comes from the highlands of the southernmost region of the Ribera del Duero, from small plots with old Tempranillo vines growing in rugged terrain with deep red clay soil at an altitude of 900-1200 metres above sea level. Vineyards are cultivated with a total respect for the environment, practicing agroforestry viticulture, in which the vines coexist with autochthonous species to potential development and their integration into the ecosystem.

Winemaking:

The grapes are harvested after a selection process. Pre-fermentation at a controlled temperature with native yeasts in steel tanks, submitted to pump-overs and phenolic control. Spontaneous malolactic fermentation at low temperature in French oak Fudres.

Ageing for 12 months in French oak fudres. Bottled without any clarification or stabilitation.

Tasting Notes:

A modern, beautiful wine with lots of personality and complexity. Outstanding frutal expression, red and black fruit, combined with notes of vanilla, liquorice, aromatic herbs, and spicy aromas.

On the palate, it is fresh and vibrant. Lively with good acidity, and round and firm tannins. Finishing long with a lingering pleasant menthol aftertaste.

Notes: Conserve in a horizontal position in a cool environment. Potential evolution over the next 15 years.

THE WINERY:

Pago de los Capellanes is a relatively young winery, founded in 1996 when Paco Rodero, the son of Doroteo Rodero, and his wife Conchita Villa, recovered the family vineyard, expanding the property by acquiring neighboring plots.

The winery is located close to the village of Pedrosa del Duero in the heart of the Ribera del Duero Region and its vineyards are divided into 35 parcels, from which their grapes are vinified separately. The soil is made up of clay and chalk. The vineyards are planted only with Tempranillo or Tinto Fino grapes, the variety indigenous to the region. They only harvest 5000 kg of grapes per hectare, well below the 7000 kg allowed by the Regulatory Council of the Ribera del Duero Region to guarantee the highest quality.
