Production: The flagship wine from the celler and one of the few one to have the Vi de Finca distinction. A Single vineyard wine made from a blend of Carignan and Cabernet Sauvignon, very old Carignan vines selected from centenarian vineyards. Manually de-stemmed. Fermentation takes place in open top 300 liter at controlled temperature of 25 – 29ºC with daily pigeage and gentle remontage. Ageing during 16 months in 300 liter light and medium toasted fine new French oak barriques. 215 Magnums bottled in May 2018.
Celler Vall Llach, founded at the beginning of the 1990s, is located in the village of Porrera in the highly acclaimed wine region known as Priorat. The Celler owns a selection of magnificent old estates – known locally as trossos- planted with 60 to 90 year old Carignan and Grenache vines, located on steep slate hillsides, receiving optimum sun exposure at a considerable height above sea level and unable to retain water. Vall Llach cultivates their old vines according to traditional methods, without the use of machinery. They also complement their stocks with the careful purchase of grapes from farms selected for their quality from among the oldest and most reputable of the Porrera and Torroja area. In the early 90s, the celler had also started some new plantations intended to complete the Celler’s wine production, choosing the varieties of Grenache, Cabernet Sauvignon, Merlot and Syrah. A very limited part of these varieties will then be used to complete and soften the complexities and taste of their signature wine Vall Llach. Although mainly theses grapes from these new plantations will be used for the production of the Embruix, the 3rd wine of the celler and another part also of extremely high quality will help to define the second house wine: Idus de Vall Llach.
Tasting Notes: Deep and concentrated, extremely black fruit, very ripe, spicy and minerally, marked tannins, warm finish.
Notes: It is recommended to decant the wine. Long life.
