Vinegar made from the Pedro Ximénez grape variety, aged for 25 years in American oak casks at the Ximénez Spínola winery in Jerez.
Acetum Flumen is the exclusive recipient of one part of the "En Rama" Casks of vinegar, extracted directly from the same cask without undergoing any further treatment.
Paula Coll Pedro Ximénez is part of the Acetum Flumen Collection, ages in casks that have developed acetic contamination and therefore intended for the ageing of vinegar. The result vinegar is obtained naturally and spontaneously.
This is an intensely acetic vinegar, of great intensity and elegance and with the sweetness characteristic of the Pedro Ximenez variety.
Notes: Sediments could appear as the result of its ageing in oak.
