Vinegar made from the Pedro Ximénez grape variety, PX raisins that have been converted into acetate by natural yeasts, obtained in a natural way.
Considered a wonderful mistake, the consequence of a natural process where the work of the yeasts known as "mycoderma" has converted the PX raisins into acetate, or "vinegar". The resulting vinegar is obtained directly from the barrel, naturally and spontaneously.
Bottled "En Rama" means bottled unfiltered and in the same conditions in which it is taken directly from the cask without undergoing any further treatment, therefore maintaining all the aromas and flavours.
This is an intensely acetic vinegar of great intensity and elegance, with the sweetness characteristic of the Pedro Ximenez variety.
Notes: Sediments could appear as the result of its ageing in oak.
THE WINERY
Ximénez-Spínola is a small, independent family winery, a specialist in elaborating products exclusively from Pedro Ximénez. They put all their effort into the quality and prestige of its production, and as a result, their production is extremely small, with releases very limited and each numbered, which transforms each bottle into a unique piece with a full guarantee of the quality and age of their products.
