Aus Tallarol is an organic, natural white wine made from the Pansa Blanca (Xarel.lo) variety. Elaborated by Celler de les Aus in Tiana, Alella, Barcelona. It is part of the range of wines from the natural wine project of the Pujol-Busquets Guillen family of the renowned Alta Alella winery in the Alella region.

Celler de les Aus is a young winery that is part of the Alta Alella family winery, located in Tiana, within the Serralada de Marina Natural Park in Barcelona. It focuses on making the best radical wines and cavas using minimal intervention methods, always with great respect for the terroir and without adding sulphites. Celler de les Aus, which translates to "Celler of the birds", pays homage to the fauna that inhabits the vineyards of the Serralada de Marina Natural Park; all their wines and cavas are named after birds, reflecting the winery's deep connection with nature.

Winemaking:

The grapes are hand harvested. They are lightly pressed to obtain the free-run juice. Spontaneous fermentation in a cement egg based on clay (oeuf de Beaune), which allows the lees to move freely, resulting in a "natural battonnage". Afterwards it is bottled without added sulphites or any other product to preserve its purity.

Tasting Notes:

Natural, fresh, and clean wine. Yellow colour with a golden hue. Expressive in the nose, displaying aromas of white fruit such as pear and apple, intermixed with green almonds, a touch of fennel, and citrus notes. Entry on the palate with volume, quite tasty and unctuous. The taste is dominated by ripe white fruit that, together with some saline notes and good acidity, marks the wine's character.
