This small production red wine is made entirely of pure Carignan which is sourced from a single plot of low-yielding, over 60 year-old vines planted on a sloped, high-altitude, north-facing hillside in the municipal district of the village of Torroja, within the Priorat appellation.
The vinification starts mainly with the hand selection of the fruits in the vineyard, followed by a careful hand sorting process to remove any overripe or undesirable grapes. Full clusters fermented in tanks with natural yeasts. The wine ages for about 24 months in a combination of 500-liter French oak barriques and a 2500-liter oak “foudre” (oval cask) before being bottled under gravity without fining or filtration.
Tasting notes: Aromas of dark and ripe fruit with a graphitic edge of black fruit. Medium-bodied wine, elegant, creamy, ripe flavors, mineral, and nicely balanced.
