Emma Ancestral is a sparkling wine made under the ancestral method, a very old method that produces sparkling wines after a single fermentation. In the ancestral method, the must starts its fermentation in the tank, but it is bottled before finishing in order to complete the fermentation in the bottle.

Production:

Natural ancestral sparkling wine from ecological Albariño vines, selected grapes from high-altitude vineyards, growing on poor slate hillsides "Costers", between 800 and 900 metres above sea level, up the hills of Prades in the small village of Vilanova de Prades.

Elaborated with its own yeast, disgorged in the traditional way, and bottled unfiltered with no sulphites added. SO2 content of less than 10 mg/l.

Small production and practising viticulture with high respect to the environment, following the rules of organic viticulture, both in the vineyard and in the winery, and the lunar phase calendar. 

The vines are farmed organically and duly certified by the authorities: CCPAE, the Catalan Council of Organic Production, the public watchdog responsible to the Catalan government's Ministry of Agriculture.

Notes: Ideal as an aperitif. CONTAINS NATURAL SEDIMENTS OF FERMENTATION
