Panoramix Molotov is a Blanc de Noir 100% Tempranillo from Agricola Pallarades. A singular sparkling ancestral wine made from 100% Tempranillo grapes grown in Tarragona.
The Ancestral is a sparkling wine made under the ancestral method, a very old method that produces sparkling wines after a single fermentation. In the ancestral method, the must starts its fermentation in the tank, but it is bottled before finishing in order to complete the fermentation in the bottle.
The wines are part of the young project of Josep Armengol. A project born in "Cal Pallarades", an old winery dating back to 1908, located in Puigdelfí in Tarragona, that has been recovered and rehabilitated by Josep, the grandson of the original winery founder. Since 2020, Josep has been working to materialise this project, continuing with the farming work and the cultivation of the vines to produce his own wines.
The vines grow in calcareous soil, typical of the area and influenced by the Mediterranean Sea. The grapes are harvested by hand, with two different vinifications with their skins.
Vinification:
The grapes are selected and harvested by hand. They are soft pressed and fermented in stainless steel vats and finish the fermentation in the bottle.
Tasting Notes:
Pale yellow in colour with fine, well-integrated bubbles. Freshness with a citrus note on the nose. The palate displays a sweet tooth, broad and balanced, with good intensity and the structure of a red wine while having the freshness of a white wine.
