The FIRST of the 9+ Sparkling Selection is a Brut Nature 100% White Cartoixà selection. A natural, sparkling wine without added sulphite, made from 100% white Cartoixà grapes from eco-certified vines.

The 1r Sparkling Ancestral belongs to the range of the single varietal selection wines. Produced by Celler 9+ in La Nou de Gaià, a small village in the Tarragonès area. Moisès Virgili i Rovira, a winegrower with a strong connection to and passion for agriculture since childhood, is the heart and soul behind this project, which was launched with the aim of making natural wines and giving all the protagonism to the local varieties sourced from their own vineyards.

They work 38 hectares, of which 20 hectares are planted with vines on calcareous soils. The vines are organically farmed and benefit from the influence of the Mediterranean Sea breeze.

The wines are crafted with the utmost respect for the environment and without any additives or preservatives. Only grapes!! Small productions are made.

The vineyards are organically farmed, duly certified by the authority CCPAE, the Catalan Council for Organic Agricultural Production.

Vinification:

Grapes are hand-harvested. Produced by the traditional method. The grapes are destemmed and pressed. Fermentation takes place in stainless steel tanks for 15 days at 14-15º. After racking, concentrated organic must and yeast are added, and it is bottled with cork stoppers. The second fermentation will take place in the bottle.

Aged for a minimum of 15 months. No Expedition liqueur is added; it is free of preservatives or fining agents and no added sulphites.

Tasting Notes:

Fine and constant bubbles, very well integrated. Elegant and complex. It displays the characteristic varietal aromas, a blend of white flowers and stone fruit notes. The palate is very fresh, with citrus notes that provide an excellent acidity and finish with notes reminiscent of dried fruit.
