Caibelles is the new release from the most personal project of the Celler Mendal, led entirely by Alicia Serres, the winery's new generation and eldest daughter of Laureano Serres.
She has created a limited series of minimal intervention wines born of the freedom to create and experiment and crafted entirely using organic farming methods.
True to Celler Mendall's philosophy, Alicia crafts her wines from the family's 9-hectare vineyards, comprising vines of varying ages. These vineyards are spread across Corbera d'Ebre, Vilalba dels Arcs, and La Fatarella, situated in Terra Alta at an altitude of around 500 metres above sea level. They are producers of natural wines, carying the vines right up to the harvest, relying on spontaneous fermentation, and gently monitoring the wine all the way to the final bottling.
Production:
This 100% Carignan wine is crafted from a blend of young and old vines, ranging from 5 to 90 years old, growing in clay-limestone loam.
The grapes are harvested by hand and destemmed, followed by a 17-day maceration period. Fermentation takes place with indigenous yeasts in stainless steel tanks, where the wine is also left to rest for 4 months before bottling.
Bottled unfiltered and unclarified, with no added sulphites. SO₂ < 10 mg/l.
Tasting Notes:
Deep picota cherry colour. Fragrant, with prominent notes of ripe black fruit, mineral romas and hints of Mediterranean scrubs. Full-bodied and intense on the palate, with lively acidity and perfect balance. A long finish with marked complexity.
It is recommended opening the bottle a couple of hours beforehand to allow it to breathe.
