Tuets Tot Ancestral is a sparkling wine made under the ancestral method, a very old method that produces sparkling wines after a single fermentation. In the ancestral method, the must starts its fermentation in the tank but is bottled before finishing in order to complete the fermentation in the bottle.

Production: 

A natural sparkling wine blended from the winery’s different white varieties. Hand-picked grapes are destemmed, crushed, and in pellicular maceration for 1 day. Elaborated with its own yeasts, bottled at a density of 1002. Disgorged in the traditional way, it is bottled unfiltered with no sulphites added.

Annual production of 3105 bottles.

SO₂ < 20 and residual sugar < 2 g/l

Natural wine, unfiltered, pale yellow colour, citrussy notes, honeydew, chamomile, light and refreshing. Suitable for vegans

THE CELLER

Celler Tuets is a small family winery in Aiguamurcia, a small village situated in the Alt Camp area in the province of Tarragona.

The creator of the wines is Albert Domingo, a passionate and enthusiastic young winemaker who, together with his father, works the family estate, 70 hectares of land that has been in the family’s hands for six generations. Of those, 22 ha are planted with vines on predominately calcareous soils at an altitude of 500–600 metres above sea level.

The wines are organically farmed using biodynamic principles, which Albert is very fond of. They have been practising organic farming for a long time, and for a few years, the farm has been fully certified organic.

Albert’s philosophy is zero intervention, manual harvest; all the wines are vinified in stainless steel vats, fermented with natural yeasts, and have no fining, stabilisation, or filtering and are sulphite- and additive-free.
