Distillate of pure wine at low graduation. The quality of this pure brandy is achieved 100% from the same must harvested and fermented as the "cosecha" wine of the House Ximénez-Spínola. A brandy that does not need to be old to have the highest quality.

Production: 

Obtained in a maceration with its lees and very soft raking in a 300-litre French oak cask, seeking "fruit purity" over "old age" expression.

The grapes are slowly and gradually dehydrated under the sun exposure, obtaining 200 litres of must from each ton of fresh grapes. The wine is then distilled and left to rest in wood. The ageing is limited to eight months in French oak barrels in order to avoid excess oak and astringency. This subtle ageing makes it possible to evolve without oxidation with a unique silk sensation in the mouth, enhanced by the aromas provided by the manual batonnage of each cask.

Each bottle comes numbered individually as a guarantee of its authenticity.

Tasting Notes:

A very light straw gold colour, clean and bright. Subtly oxidixed, clean, and ripe fruit with just the right amount of oak. Very fine, delicate, and expressive, with silkiness and smoothness and perfect balance from beginning to end.

Ximénez-Spínola is a small, independent family winery, a specialist in elaborating products exclusively from Pedro Ximénez. They put all their effort into the quality and prestige of its production, and as a result, their production is extremely small, with releases very limited and each numbered, which transforms each bottle into a unique piece with a full guarantee of the quality and age of their products.
