Novetat Total is a red wine from the personal project of Eloi Cedó, Sistema Vinari in Binissalem, Mallorca.

It is a natural red wine with no added sulphites, produced organically from native grapes, primarily Callet, complemented by Monte Negro. It is characterised by its freshness, youth and juiciness, with a subtle hint of carbonic maceration.

Production:  

Grapes harvested by hand. 50-75% destemming. Maceration for 15-20 days. Fermentation with indigenous yeasts in plastic, concrete and stainless steel vats. Followed by 5 months ageing in concrete and stainless tanks. Bottled without fining, filtering or added sulphites. SO₂: < 20 mg/l.

Very limited production.

Tasting Notes:

Fresh red fruit-scented nose, complemented by herbal and spice undertones. Medium body, juicy and smooth palate with plenty of wild berry fruit flavours and Mediterranean herbs, keenly balanced in acidity and a fresh finish.
