Production:

Organically produced wine. Made from the native variety in the area. Sumoll. It has fermented at a controlled temperature in stainless steel vats for 2 months.

Tasting Notes: 

Fresh and clean nose, fine aromas of fresh red fruits, blackberries, strawberries, subtle notes of liquorice, fennel, and minerals. Elegant with a smooth texture and good fruity character, finishing dry with a nice bitterness. 

Notes: This wine is made to be enjoyed in its youth, over the next 1-2 years.

Celler Pardas is a small, family-owned winery that is relatively young. The project started in 1997, but it was not until 2004 that their first vintage was produced. It is located in the state of San Comas, in the municipal district of Torrelavit, in the Alt Penedès area, within the D.O. Penedès.

Their 30 hectares of vineyards are spread out along terraces on clay-chalk soils and are planted with the already existing autochthonous vines—Monastrell, Xarel.lo, Sumoll, and others—and the different new varieties planted—Cabernet Sauvignon, Cabernet Franc, and Merlot. Their priority is obtaining low yields to preserve the maximum fruitiness and typicity of the varietal in all the wines they produce.
