Domaine Billaud-Simon, one of the renowned names in Chablis, has been making wines since 1815 from 20 hectares of vines very well placed in the appellation, including vineyards in four Grand Crus and four leading Premier Crus. They also produce AC Chablis from fruit grown on their own estate.

The Chablis has been sourced from vines with an age range of 35–65 years. Manually harvested, then fermented in stainless steel at a low temperature and aged 10 months.

It is delicious right now and can also age beautifully over the next 5–6 years.

Tasting notes: A great, classy, and balanced wine with ripe pear and concentrated green apple aromas intertwined with lemon, vanilla, and liquorice notes. The palate is creamy and soft, with a good fruit weight that is quite mineral, as well as volume, length, and complexity.
