Production: 

Dry Palo Cortado made from 100% Pedro Ximénez grape; hand collected. The first Palo Cortado wine made with this variety from selected casks, inside the DO Jerez-Xérès-Sherry.

The "Dry Sherry" series of the Ximénez-Spínola house is composed of classic sherry wines, naturally fermented in the French oak casks for white wines, in which Ximénez-Spínola has been producing for more than a decade, using traditional wine-making methods.

Made from 100% Pedro Ximénez grapes, the behaviour of this variety in the production of dry sherries is extremely expressive. Benefited by the proximity to the sea, which provides natural acidity and allows over the years, to have an authentic and natural wine for ageing.

A unique numbered elaboration with a final production of 2592 bottles of the "Jerez Seco Serie 2". Each "Serie" of these wines is unrepeatable and is obtained from selected full casks.SO each edition is document of a unique vinification in space, time and behaviour, which is impossible to repeat in future series, should they ever get bottled.

THE WINERY

Ximénez-Spínola is a small, independent family winery, specialist in elaborating products exclusively from Pedro Ximénez. They put all their effort into the quality and prestige of its production, and as a result, their production, is extremely small, with releases very limited and each numbered, which transforms each bottle into a unique piece with a full guarantee of the quality and age of their products.
