Bimbache La Raya is a white wine from El Hierro in the Canary Islands, the project of Rayco Fernández at his small winery in the north of the island. Despite being the smallest island in the archipelago, EL Hierro boasts a winemaking tradition dating back to the 16th century, with a wide diversity of grape varieties, volcanic soil at different altitudes and a wide range of microclimates.

They farm their own vineyards organically as well as selected plots from local growers, whom they supervise closely. They work with indigenous grape varieties, and the result is wines vibrantly fresh, marked by a distinct volcanic and Atlantic character.

Production:

A vibrant white wine made from a blend of local varieties.

Harvested manually late in the season with grape selection in the vineyard. Following spontaneous fermentation with indigenous yeasts. The wine ages in oak casks seasoned with sherry, where it matures under a veil of flor for 9-12 months.

Bottled unfiltered or unfined and produced in very limited quantities. Bottled in June 2025.

Tasting Notes:

A beautifully dry white wine with a distinct Atlantic and volcanic background. On the nose, it displays notes of almonds, citrus and slight saltiness. It passes across the palate with a smooth and evolving texture, bringing out hints of slightly spiced candied fruit. The finish is salty and mineral.
