A single-vineyard ecological wine from the town of La Aguilera's oldest Tempranillo vines. A blend of 85% vines and other varieties (5%) that include the White Albillo, Garnacha, and Bobal grapes growing in vineyards located at high altitudes of 800–900 metres above sea level.

Production:

Hand-harvested following a careful selection of the best grapes, which have been traditionally trodden with the feet. The wine is whole-cluster fermented with native yeasts and aged for 35 months in French oak in the cold underground cellar, where it ages slowly under very cold temperatures. Bottled unfiltered and without clarification.

Tasting notes:

Expressive and fresh, with a perfumed nose of mature red and black fruit and wild forest herbs. Full-bodied and elegant. Silk-textured, with all the elements in the right place, flavoursome and complex, ripe dark berry fruit, juicy tannins; and a very long and persistent finish.

THE WINERY

Jorge Monzón, the man behind this personal and unique project, can boast of a formidable CV when it comes to winemaking, an experience gained while working in such prestigious places as Romanée Conti, Vega Sicilia, and finally Bodegas Arzuaga, where he took charge of the viticulture and enology side for 9 years.

Dominio del Águila was created in 2010 by Jorge and his wife Isabel Rodero, who together craft a small volume of fantastic wines using the fruit of old ecologically farmed vineyards in the 30 hectares in total which they own in the small village of La Aguilera, near Aranda del Duero. Their wines are remarkable for their freshness, powerful yet elegant and singular.
