Production: 

Organic wine, grapes harvested by hand, followed by a careful sorting of the grapes at the cellar. Fermentation is done with natural yeast at a controlled temperature of 27ºC. The malolactic fermentation is made in 100% French oak Allier with quarterly racking. Aged for 16 months in new (60%) and second-year French Allier oak.

Tasting Notes:

A slightly floral nose overlaid with mineral aromas and minty notes. Elegant, full-flavoured wine with ripe black fruits dominated by mineral notes, elegant silky tannins, and a lengthy and persistent aftertaste with hints of cinnamon.

Note: It is recommended to decant. It will gain with some bottle ageing. 

Hacienda Monasterio is one of the Ribera del Duero’s stars. Its principal winemaker is the well-known Dane, Peter Sisseck (Dominio de Pingus). Founded in 1991, the estate spans 160 hectares, 78 of which are planted with vines. It is situated in the Duero River Valley in the province of Valladolid.

The vineyards are exceptionally well placed, on a north-south-facing slope, which provides excellent conditions for the proper growth and maturation of the grapes. The winery practises organic viticulture; they are environmentally friendly, and no herbicides, pesticides, or chemical fertilisers are used, promoting the use of natural products such as plant extracts of Valeriana, Hypericum, milfoil, etc.
