Lalama comes from different plots, with vine ages ranging from the youngest of 25 years to the oldest centenary vines. Composed of different types of soils: slate, clay, and granite. Located at an altitude between 300 and 700 metres.

Production:

Each grape variety is handpicked separately, followed by a triple selection by hand: cluster by cluster in the vineyard, prior to destemming, and then berry by berry. Prefermentative maceration for 2 days. Spontaneous fermentation in French oak cylindrical vats, with long, gentle macerations. Daily pump-overs. Manual devatting and racking.

Ageing for 17 months in 300 and 500-litre used French barrels and 15 and 30 hl. After blending, the wine was matured for 3 months in 45 hl cylindrical French oak tanks. Aged in bottle for a minimum of 6 months.

There could be solid residue. It is recommended to let the wine breathe or decant before serving. Drinks very well now and over the next 3-4 years.

Tasting Notes: Good concentration of ripe fruit (black cherry, black raspberry). Slight floral notes with good grip and structure. On the palate, there are elegant black fruit and mineral notes. Good complexity and smooth texture, finishing nicely with light mature tannins.
