Production: 

Obtained mainly from the indigenous white grape of the region, Zalema, and in smaller proportion, Pedro Ximénez. Crafted from an Oloroso sweet wine that has been in contact with the dehydrated peel of the bitter oranges from the Doñana region in Andalucia. With all the time on their side, a long maceration process of 8 years minimum on its lees takes place in specially oak casks, ageing in the silence and stillness of the winery where the wine acquires its

 

Notes: Excellent with chocolate and truffle desserts, also with foie, smoked meats, or blue cheeses. It goes very well combined in certain cocktails and as an after dinner drink to be enjoyed on its own.
