Production:

The Pedro Ximénez grapes are laid out in the sun for several days. Fermentation is stopped in order to keep the natural sugar of the grapes. Afterwards, it is fortified and then aged in the “solera and criaderas” system.

Tasting Notes: Dark mahogany in colour. Aromas of raisins, dry figs, prunes, and roasted coffee beans on the nose. Rich, sweet, and velvety in the mouth, displaying intense flavours of dates and figs, with a very long finish.

Notes: Ideal poured over vanilla ice cream, with blue cheese or chocolate-based desserts. It is also an excellent digestif.
