Vi de Glass 100% Gewürztraminer, created with the idea of producing a wine of similar characteristics to Eiswein (ice wine), despite the fact that the region of Penedès does not have the right climatic conditions for its production with freezing temperatures during the harvest months.

It is made from grapes frozen post-harvest. In order to achieve this, following a late harvest, the only natural way to concentrate this must is by partial freezing, which enables full oenological control of the process, supraextraction, and cryoextraction in a cold chamber, using a yeast with an accentuated plasmolysis effect, especially selected by the University of Bordeaux. The result is a highly concentrated fruited wine that is sweet and tart; it shows good ageing capacity and evolves very well in bottle.

Tasting Notes:

Light yellow with a yellowish-green tone in colour. Rich aromas of citric and exotic fruits of apricot and lychee combine with a delicate floral-scented nose of fennel and rose water. Silky and unctuous on the palate, with good fruit expression, good acidity, very harmonious.

Note:

It has ageing capacity and will evolve very well in bottle. The foods to be paired with this wine will depend on the point of its evolution when the bottle is opened.

When still young, it can be enjoyed as a dessert wine or drunk on its own. With the complexity of ageing, it will match perfectly with strong cheeses, natural foie gras, oysters, or scallops.
