Cap de Grills is the latest creation by Celler Diaz, the first vermouth made with the white variety, Malvasia de Sitges, the most characteristic grape variety in the municipality of Sitges, the beautiful coastal town, south of Barcelona, where Miguel A. Diaz's small artisan cellar is located in his old Family house.
Cap de Grills is made following the traditional method of the 19th century Sitges vermouths. It goes through a long maceration process with more than 12 aromatic plants and it is from there, it gets its bright, dark toasted color. A maceration in Damajuanas on the roof of the Celler, that will go on for 3 months, and followed by a long process of homogenization in deposit for another 3 months.
Bright dark toasted color that denotes its long maceration. Strong aromatic intensity, predominately herbal aromas from mugwort and gentian plants, nutmeg and cinnamon combined with a subtle citrus touch from the bitter orange peels that have been introduced at the final part of the maceration. Sweet-bitter balance, very long and unctuous.
Perfect as an aperitif or as a base for cocktails, to be served on ice with orange peel.
