Production:

Organically produced with minimal intervention. Made from the native variety in the area. Sumoll. Grapes selected from old vineyards on the "Can Comas" estate with clay-limestone soils.

Vinification:

100% hand-harvested, with careful sorting of the grapes both in the vineyards and at the sorting table at the winery.

50% destemmed, crushed, and gravity-filled into the tanks. 50% whole grapes with stems. Spontaneous fermentation. Aged for 3 months in concrete tanks. The wine was neither stabilised nor clarified.

Tasting Notes: 

Fresh and clean nose, fruity with fine aromas of fresh red berries and a light aromatic herb. Smooth and elegant soft tannins. An honest and direct wine with a good frutal character, finishing dry and long.

Notes: This wine is made to be enjoyed in its youth, over the next 1-2 years.

Celler Pardas is a small, family-owned winery that is relatively young. The project started in 1997, but it was not until 2004 that their first vintage was produced. It is located in the state of San Comas, in the municipal district of Torrelavit, in the Alt Penedès area, within the D.O. Penedès.

Their 30 hectares of vineyards are spread out along terraces on clay-chalk soils, and are planted with the already existing autochthone vines: Monastrell, Xarel.lo, Sumoll, and others, and the different new varieties planted: Cabernet Sauvignon, Cabernet Franc, and Merlot. Their priority is obtaining low yields to preserve the maximum fruitiness and tipicity of the varietal in all the wines they produce.
