La Penitencia is a mencía-based red table wine from the region of Ribeira Sacra, made in Adegas Guímaro from the Pombeiras vineyard, owned by Guimaro, from almost centenarian vines planted on small, steeply sloped terraces along the river Sil.

The cuvée is mainly Mencía (85%), complemented with a small quantity of other red varieties. Fermented always with whole clusters and indigenous yeasts in 1500-litre oak vats. Spent 12 months in 500-litre French oak barrels.

It is sold without the Denomination of Origin seal, and its production is very small. 800 bottles

Tasting notes: 

Mineral with hints of spices, ripe dark cherry fruit, and a slight floral and herbal touch. Medium-bodied, elegant, and balanced, with soft and velvety tannins and very good acidity.

 Notes: It has a good capacity for ageing and will drink well for 10–15 years.

Getting hold of his wines is not that easy, as they are probably one of the most sought after.
