Production: Agustí Torello Sibill moves away from the Family business well known Cavas, Agustí Torelló Mata and together with his sons begins a new project elaborating wines at their own cellar and with his own son Agustí Torelló Roca as the enologist. The sparkling wine is elaborated in the wine region of Penedès, although they are in the heart of the cava production region, Sant Sadurní d’Anoia, they produce their sparkling wines outside the appellation of D.O. Cava. Committed to the use of the autochthonous varieties, Macabeo, Xarel.lo and Parellada are cultivated under the basis of ecological agriculture and sustainable viticulture practices in their vineyards.
The Reserva Barrica is a Classic Penedès elaborated exclusively from Macabeo sourced from a single vineyard; “La Vinya Esparter”, an old, low-yielding, single vineyard, planted on limestone and shale soils in Costers d l’Ordal. The wine is fermented and aged during 7 months in oak barrels on its lees, afterward follows a long-ageing process of minimum 30 months in bottle which gives the wine its genuine terroir character with its elegance, fineness and complexity.
Tasting Notes: Straw yellow, slow and very fine bubble, elegant and clean nose, extraordinary complexity of aromas, white fruit followed by spicy notes, vanilla with a lightly smokiness. On the palate complex layered flavors, mouth-filling, complex, creamy and mineral, pastry and toasted notes with a good acidity and a fresh and elegant long finish.
