Organic sparkling wine, long-aged and very gastronomic. A blend of the traditional Xarel.lo variety with the Chardonnay and Pinot Noir varieties. The grapes are grown organically and biodynamically on the family estate "Les Valls" in Penedès with minimal intervention in the cellar.
Hand-harvested, gently separated pressing. The Chardonnay and Xarel.lo varieties are fermented separately in stainless steel vats at 16ºC. The Pinot Noir is vinified as "blanc de noirs," on lees for 2 months with batonnage three times a week.
Second fermentation in the bottle according to the traditional method, with a minimum ageing of 80 months.
Tasting Notes: Golden yellow in colour. Intense aromatic nose of dried fruits followed up by toasted notes and fruit in compote. The palate is elegant, firm, full-bodied, with good acidity, spicy notes, orange peel and ripe fruit. A great finish with a lot of finesse.

Parés Baltá is a family-owned winery in the Penedès region, managed by the third generation of a family of winemakers, the Cusiné family. Producers of a wide range of high-quality wines and cavas from grapes sourced exclusively from their five estates, which are spread out on a variety of soils with different climates and at different altitudes ranging from 170 to 800 meters above sea level and only 10 km from the sea.
The vineyards at Parés Baltà are cultivated in an environmentally friendly manner, and in 2011, they began applying biodynamic farming techniques to their vineyards, working with biodynamic preparations and homoeopathic remedies, resulting in high fertility and natural pest control.
All of their wines are organically farmed and produced, duly certified by the authority CCPAE, the Catalan Council of Organic Production, the public watchdog responsible to the Catalan Government's Ministry of Agriculture.
