Elaborated from the Penedès autochthonous varieties, Macabeo, Xarel·lo, and Parellada. Manually harvested. Fermentation from each variety separately at a controlled temperature between 15 and 18 ºC in stainless steel vats. Aged for 24 months.
Tasting Notes:
Pale yellow colour with fine bubbles. Fresh on the nose, it displays aromas of white mature fruit and citric notes, combined with fine hints of its ageing that give it complexity and elegance. Well balanced, with the carbonic well integrated. It has a long and creamy aftertaste.
Note: Best consumed up to 12–24 months after the disgorgement date. Ideal with aperitifs, oysters, fish and shellfish, and rice dishes.
THE WINERY
Caves Canals Canals was founded in 1975 by Miquel Canals Ollé. The wine cellars are located in Castellvi de Rosanes, a small village in the wine-growing region of the D.O. Penedès. Some of the oldest cellars date back to 1903. It was in 1975 when Miquel, together with his son Ramon Llaverols, an oenologist by profession, decided to produce their first bottles of cava, and since then, CANALS CANALS has grown and transformed into a modern company that still keeps to its principles and the quality of all its products.
