Cuevas de Arom As Ladieras belongs to the range of wines of the project resulting from the friendship of two wineries, Frontonio & San Alejandro. It is a single-varietal wine made from pure Garnacha grapes from old vines at high altitudes on steep slopes with slate soils.
Each wine is made respecting the specific characteristics of the grapes to achieve the most innovative and maximum elegance of the Garnacha grape.
Produced under the Calatayud Denomination of Origin in the winery located in Ainzón, on the ground floor or the Ainzón cooperative, where the grapes are aged in old cement tanks.
Vinification:
Hand-harvesting and fermentation partly with stems and indigenous yeasts in open vats. Aged in underground concrete and 30 hl Austrian foudre for 10 to 12 months.
Tasting notes:
Pure, unmasked Grenache with freshness and elegance. The nose combines ripe black fruit notes with spicy and mineral notes and light floral hints. Full-bodied and smooth on the palate, with a fresh, agile, and long finish.
CUEVAS DE AROM
The second joint project of Fernando Mora, Master of Wine, and Mario López, winemaker of Bodegas Borsao. This project is a partnership with Bodegas San Alejandro, a union with a common aim: to produce the best garnachas in the world, where the freshness of Fernando Mora and Mario López's Bodega Frontonio is combined with the serenity and expertise of Bodegas San Alejandro.
Cuevas de Arom, located on the ground floor of the Aizón cooperative, was born after the search for the freshness that can be found in Calatayud with its higher elevation at over 800 metres and more favourable exposures, as well as its old vineyards on precámbrico soils formed by slate that are in the hands of the cooperative farmers of Bodega San Alejandro.
Winemaking follows the Frontonio style, with manual harvests, treading, spontaneous fermentations, and partially whole bunches. 100% of the wines arrived at the winery straight after being hand-picked to ensure maximum quality. Wines with minimal intervention, using technology only when strictly necessary.
