Vi de Glass is made mostly from the Riesling variety and Muscat. It was created with the idea of producing a wine of similar characteristics to Eiswein (ice wine), despite the fact that the region of Penedès does not have the right climatic conditions for its production with freezing temperatures during the harvest months.
It is made from grapes frozen post-harvest. In order to achieve this, following a late harvest, the only natural way to concentrate this must is by partial freezing, which enables full oenological control of the process, supraextraction, and cryoextraction in a cold chamber, using a yeast with an accentuated plasmolysis effect, especially selected by the University of Bordeaux. The result is a highly concentrated fruity wine that is sweet and tart; it shows a great ageing capacity and evolves very well in bottle.
Tasting Notes:
Rich aromas of citric and exotic fruit with a delightful floral element of roses and orange blossom and white fruit, complemented with a touch of honey and aromatic herb notes. Silky and unctuous on the palate, good fruit expression, good acidity, and very harmonious.
Note:
It has aging capacity and will evolve very well in bottle. The foods to be paired with this wine will depend on the point of its evolution when the bottle is opened.
When still young, it can be enjoyed as a dessert wine or drunk on its own. With the complexity of ageing, it will match perfectly with strong cheeses, natural foie gras, oysters, or scallops.
