Dry white wine, a varietal of Pedro Xímenez, is made through a process of slow fermentation in oak casks from the must of overripe grapes sourced from their own estate. Obtained from hand-selected 100% Pedro Xímenez grapes, the result of a large and complex process of elaboration.

Production:

Overripe grapes, hand-harvested 21 days over the conventional harvest. Fermented with its own skins in 300-litre French oak barrels, adding 30 litres each day to each barrel. This way, the yeasts can transform the natural sugars from the overripe grapes into alcohol, a process lasting more than 15 days.

Intense ageing on lees for 9 months in French oak barrels and subjected to a controlled, gentle "battonage system". The result is a great aged wine with a huge potential to develop, improving greatly in bottle.

Under optimal conditions, it can go on developing over the next 15 years.

Tasting Notes:

Clean with an intense golden colour. Nose marked by the notes of French oak intermixed with aromas of raisins and dried plums. It does not present oxidation or any stridency, quite harmonious and balanced. Full-bodied, smooth, mouth-filling palate, toasty flavours, hints of natural sweetness, and acidity. Aftertaste of ripe fruit and dry nuts, persistent and rich.

Ximénez-Spínola is a small, independent family winery, a specialist in elaborating products exclusively from Pedro Ximénez. They put all their effort into the quality and prestige of its production, and as a result, their production is extremely small, with releases very limited and each numbered, which transforms each bottle into a unique piece with a full guarantee of the quality and age of their products.
