Sketch is a pure Albariño wine sourced from old vines planted in 1972. Although it is an Albariño from the Salnés subzone, it's sold without the Rias Baixas Denomination of Origin seal. The vines are located at a short distance from the sea – just 150 metres – growing in a mixture of sandy and granite soil.

Sketch is among the most sought-after Spanish whites due to the great worldwide recognition of its creator and the fact that it is a wine of very limited production.

Elaboration:

The harvest takes place at least two weeks later than usual. Fermentation and ageing happen in a large old French oak barrel of 750 litres in contact with its fine lees for 12 months. The bottles will then rest for approximately three months at a constant temperature, humidity, and pressure at 19 metres deep in the Arousa Estuary.

In its beginnings, it was one of the first wines in Spain to be aged underwater. Nowadays, only a small amount of this wine is aged underwater, where the bottles will rest for around three months at a steady temperature, humidity, and pressure 19 metres below the surface of the Arousa Estuary.

Tasting notes:

Remarkable for its complexity and elegance, as well as for its character. Its style is reminiscent of a Burgundy wine. Fragrant and dry, with citric notes and creamy aromas, saline notes, and good mineral intensity. Excellent acidity.

Notes: The wine has a good ageing potential.
