Dido Blanc is an organic wine sourced from a selection of well-known local varieties of grapes picked manually from various different plots located within the Montsant Denomination of Origin.
The Grenache comes from two plots near the villages of Marçà and Falset; the first is a 70-year-old vineyard located in the warmest part of the DO. The second plot, planted with 25-year-old Grenache and Macabeo vines, is located in the area of Falset, a much fresher zone where the grapes obtain good acidity and lower pH to compensate for the warmth and density of the first plot. The other 2 vineyards of 70-year-old Macabeo vines are located in cooler areas where the grapes ripen later.
The alcoholic fermentation took place in wood using natural yeast over the course of ten months. Afterwards, 40% of the wine was aged in French oak for 6 to 9 months, 30% in a used foudre, and the remaining 30% in a clay amphora Vase.
Tasting Notes: Fresh and elegant wine with a Mediterranean character. On the nose, it shows good minerality, white fruit and tropical fruit aromas with Mediterranean herbs and toasted notes. Attractively gentle and mineral, with good, round fruit and balancing acidity on the palate, it is very harmonious with a nice, long, dry finish.
Venus la Universal is a small winery located in the locality of Falset within the Denomination of Origin Montsant. It belongs to Sara Perez and her husband, René Barbier Jr., a young and super talented couple of oenologists who make a very special team with plenty of experience, energy, and talent. Their 4 ha of vineyards are planted on granitic soils that are acid and very poor in organic matter. They are all organically farmed, showing at all times a great respect for nature and the environment.
