Production:
Organic sparkling wine made according to the regulations of the governing body of organic viticulture. Elaborated from the three classic cava varieties.
Harvested and selected manually at the optimum moment of ripeness for each variety, lightly pressed and fermented in stainless steel vats for each variety separately, with a minimum ageing on its lees of 15 to 27 months. Residual sugar: 0 g/L.
Fully certified organic, CCPAE for the European market.
Tasting Notes: Clean, dry aromas of citrus and white fruit, green almonds, and apples, with a lovely mousse and white fruits on the palate, light and fresh.

Alta Alella is a family project started back in the early nineties by Josep Maria Pujol-Busquets and his wife, Cristina Guillen, a modern cellar. Their property, which is located 2 km from the Mediterranean Sea and close to the town of Alella, has been farming organically since the beginning and has received full certification. They currently oversee 50 hectares of vineyards within the DO Cava and the DO Alella, which are planted on slopes and terraces on Saulo soil, an acidic, sandy soil with low organic matter and low limestone content.
