Salmos is a red wine produced by the Torres family under the DOQ Priorat. This wine is intended to honour the monks of the Carthusian monastery of Escala Dei, who introduced the cultivation of vines to the region when they arrived in these lands back in 1194.
The grapes come from the altitude vineyards at the "La Giberda" estate, located in the municipality of Porrera. A beautiful spot where the vines grow on steep slopes made up of terraces on licorella soils. The grapes have been growing there since time immemorial, exposed to strong fluctuations between day and night.
Winemaking:
The fermentation takes place in stainless steel tanks under temperature control, and the malolactic fermentation is done in French oak barrels for 1 week at a controlled temperature of 24-25ºC.
The wine ages for 14 months in French oak barrels (20% new) and French oak foudres. Bottles in July 2022
Tasting Notes:
Dark cherry colour. Intense and persistent varietal aromas of ripe fruit, raspberry jam, figs and prunes intermingled with the mineral notes from the llicorella soil. Full-bodied and unctuous on the palate, it displays spicy aromas such as vanilla and toasted notes. With fine tannins and a long finish, it is all charm and elegance.
