Elaborated from the three traditional Cava varieties: Macabeu, Xarelo and Parellada. All the fruit is sourced from the estate’s vineyards in the Alt Penedès region in the villages of Sant Sadurni, Torrelavit and Subirats. The entire harvesting process is carried out by hand. The wines have not been treated with herbicides nor insecticides.
Exclusively in-house vinification. 3% of the base wine aged in oak barrels for 11 months. Aged in the cellar with 100% natural cork stoppers. Remuage is carried out manually in traditional racks and disgorged by hand without freezing the neck of the bottle. Spent 51 months ageing on lees.
It is a 100% dry cava with no sugar added. Certified Organic by CCPAE and also certified Biodynamic by Demeter
Tasting Notes: Excellent mature fruit tones, citric and almond notes, lively and fresh, good concentration and a lengthy refreshing finish.
