Salvador Batlle, the winemaker behind the project of Cosmic, is the creator of this wine, born as a tribute to all the wise and hard-working farmers who have done so much to conserve all the cultural and wine heritage throughout the territory. This is a single-parcel wine, 100% Macabeu from very old vines, a wine without a denomination of origin, coming from El Pauet-Rodonyà-Sierra de Montmell (Alt Camp), 75-year-old bush vines fully ecologically certified. The wine is organically farmed following the biodynamic principles.
Vinification:
Hand-harvested. Macerate for 5 days with the skins and part of the stems. Spontaneous fermentation in a stainless steel tank with native yeasts.
Ageing in tank with its fine lees.
Natural wine without added sulphites. Very limited production of 2000 bottles.SO₂ < 10 mg/l. Bottled, unfiltered and unclarified.
Tasting Notes: Dry white wine with ripe white fruit, notes of Mediterranean herbs and white flowers. Entry smooth with volume, harmonious with a slight citric touch intermixed with the floral notes.
Cosmic Vinyaters is the project of a new generation of winemakers, passionate, enthusiastic, and talented young people with the aim to produce small-crafted volumes of well-made wines with their own unique identity, totally respecting the values of the fruit and showing great respect for nature and the expression of terroir. They practise sustainable viticulture following the biodynamic principles.
