Vinification:
Late-harvested grapes, maceration for 5-6 days with skin contact. Alcoholic fermentation with indigenous yeasts (50% with skins).
Aged for 3 months in stainless steel vats with its fine lees.
Total SO₂ < 5 mg/l
A delicately crafted wine with intense colour, cloudiness and a vibrant structure. Aromatic and fragrant wine with citric and herbaceous touches. Fresh and dry on the palate with a long finish.
THE WINERY
Bodegas Cuevas is a traditional winery dating back to the 18th century. It is housed in a unique building surrounded by centuries-old vines, situated in the centre of the village of La Portera, in the heart of the Utiel-Requena region (Valencia).
A winery that continues to make wines in the traditional and artisanal method, the same way they have for all their years of existence, prioritising respect for the environment, diversity, and only using organically grown grapes. In the winery, natural, unfiltered, and untreated winemaking is combined with the latest technologies in preservation, bottling, and labelling.
At the head of the winery is Marino Taberner, the alma mater of the winery, the oenologist and creator. He is a great connoisseur of artisanal methods and possesses a remarkable capacity for creativity. His objective is to create small quantities of wines that are emblematic of the region, have a distinct personality, and can transmit the essence of the Mediterranean.
Bodegas Cuevas is under the Regulatory Council of the DO Utiel-Requena and has the seal of the Organic Agriculture Committee of the Valencian Community.
