Production:

Sourced from vines aged between 17 and 100 years planted in slate soil at an altitude between 400 and 750 metres. All exposures. Training system in goblet and double cordon. The grapes are hand-harvested and hand-sorted in the vineyards, followed by another selection process in the winery.

Individual vinification by variety, soil, altitude, and exposition. Spontaneous fermentation in demi-muids (600L oak barrels), 1200L and 2400L Austrian foudres, and concrete ovoid tanks. Slow fermentation between 12ºC and 19ºC.

Ageing on its lees for 10 months; one part in 600L French oak barriques, 1200L, and 2400L Austrian foudres of many ages, and also in concrete ovoid tanks. After ageing, the wines were racked by gravity to stainless steel tanks, where they remained for a further seven months before being bottled to reach natural stabilisation.

Tasting Notes:

Layers of flavoured ripe fruit, fragrant herbs and sweet spices, hints of honey, and mineral notes. Good weight, well-integrated oak. Fresh and vibrant with nicely balanced acidity. Long and dry finish.

Notes: It is recommended to uncork two hours before consuming. The wine was bottled without filtration or stabilisation, so it could present sediments.
