Delicado is a hand-crafted, natural sweet wine obtained from 100% Pedro Ximénez grapes harvested by hand and sundried on the ground on food mats on the streets between the vines known as "camadas".
Production:
Only 300 kilos of raisins are obtained for each tonne of fresh grapes. Once the grapes arrive at the winery and are pressed, only 200 litres of must are obtained for each tonne of fresh grapes, resulting in an extremely low final yield.
The fermentation is taken to 13% alcohol in open French oak barrels, slowing down the alcoholic conversion process by covering the barrels without leaving any air, a 100% fermentative process that maintains the fruity aromas of the grapes and avoids any possibility of oxidation. Each bottle comes numbered individually as a guarantee of its authenticity.
Tasting Notes:
Intense, clean, and bright gold colour. On first impression, it displays aromas of meaty fruit: peach, apricot, and ripe plum. Some green apple and pear aromas are noticeable when swirling the wine, along with a slight hint of bitter almond. On the palate, it is harmonious from beginning to end, with a display of different nuances of aroma combined with a remarkable acidity. The aftertaste is long and delicious, pleasant, and fruity.
Notes: Delicious upon release, although it has outstanding potential longevity. Under optimal conditions, it can exceed 50 years.

Ximénez-Spínola is a small, independent family winery specialising in elaborating products exclusively from Pedro Ximénez. They put all their effort into the quality and prestige of their wines, and as a result, their production is extremely small, with releases very limited and each numbered, which transforms each bottle into a unique piece with a full guarantee of the quality and age of their products.
