Ximénez-Spínola Pedro Ximénez Muy Viejo is a legitimate old wine made from 100% Pedro Ximénez grapes that have been sun-raised in Jerez de la Frontera.
Each bottle of Ximénez-Spínola PX is the culmination of many years of collective effort. It is a special limited and numbered edition that is selected from 234 barrels kept in the cellar, and because of its exceptional quality and scarcity, this unique and singular sweet wine is considered a "cult wine".
Production:
Obtained from hand-harvested grapes dried under the Jerez sun for no less than 231 days and produced with the Solera & Criaderas system in the family’s solera initiated with wines from the 1909 vintage, each bottle of this very old PX is an accolade to long years of collective effort, carefully selected from the 234 casks stored in their Bodega.
Tasting Notes:
Intense mahogany colour, clean and bright, with a concentrated chocolatey nose with honeyed raisins, sweet dates, and nuts notes. Mouthfilling up-front palate of raisiny, toasty flavours with complexity and elegance, velvety texture with great length and bittersweet balance.
Notes: Although PX is frequently drunk as a dessert wine, the first sips should be taken alone in order to appreciate it in its pure state. It is regarded as an authentic enological jewel.

Ximénez-Spínola is a small, independent family winery, a specialist in elaborating products exclusively from Pedro Ximénez. They put all their effort into the quality and prestige of its production, and as a result, their production is extremely small, with releases very limited and each numbered, which transforms each bottle into a unique piece with a full guarantee of the quality and age of their products.
